Observability Module: View EKS in console

What would you like to be added?

This section is an extensive deep dive into the resources tab and could be consolidated to give a sense of the functionality without being quite as verbose. In addition, it would be good to provide some exposure to the observability and upgrade Insights tabs.

Why is this needed?

This refactoring will still allow the workshop participants to get exposure to the resources tab without requiring as lengthy a deep dive into that single section. It will also add value by highlighting two other EKS console tabs: observability and upgrade Insights
